GIMME SUSHI: THE GREEN ROLL


Okay first of all don't freak out 'cause I'm eatin' white rice. I have been consuming so much brown rice lately that tonight I just wanted to do it up white. I hope we can still be friends.

Some of you may have tuned into the fact that I have hopped on the YouTube train! That's right, peeps - I'm making videos now. (Psst you should subscribe and stuff.) The past seven days I have been uploading "What I Ate Today" videos to give you guys a better idea of my general diet. Keep in mind I go through phases of liking certain meals/foods. The past week, I have been loving rice and tomato bowls, and sushi rolls. The smoothies I have all day are basically a ritual though, they don't change much because I will never get tired of my giant smoothies... *kisses Mason jar devotedly*

Upon watching my daily food videos, you may also pick up on the fact that I am eating an 80/10/10-ish diet these days. I say "-ish" because I don't stress over sticking to labels, I just eat what I want. Recently, what I want to eat has gradually turned into a high-carb diet. It was pretty much that before (fruit all day then grains and veggies for dinner) except that I never limited my fat intake. So now I am merely cutting down on my nuts and coco oil. As I have said before - I am not trying to scare anyone about consuming fat. Fat in your diet is awesome and uber necessary; PLEASE KEEP EATING IT. However, eat it in moderation. A single serving of most of my desserts will give you your daily recommended intake of healthy, wholesome fats so no worries there, bro. I got you. And honestly even if you eat like three servings it's still all raw goodness and you'll probably keep glowing and feeling great. Some of the healthiest people in the world consume all the fat they want, so it's not like the 80/10/10 diet is ideal for everyone. I always say just DO WHAT WORKS FOR YOU. And right now, for me, it feels most natural for me to carb it up and lower the fat content. I haven't been wanting to make the recipes I usually post on my blog. I've just been wanting ALL the fruit (smoothies with 10 bananas and crazy s*** like that) and massive bowls of rice and steamed veggies. There isn't a point in the day where I'm like "ugh I want a caramel chocolate bar with all my soul at this moment" (as ludicrous as that sounds)... so I haven't been making those kinds of recipes. Again... I am NOT SAYING they are unhealthy. They're flipping fantastic. But this is a personal diet shift for me. I was consuming a lot of fat because I would test all my recipes as I was making them, and then proceed to eat most of them all by myself. Hehe. My life is fab.

Here's the idea: when you are eating high-carb, you get so full on carbs - which are the body's ideal fuel source - because you eat as much of them as you want so you don't even have room to crave fats. For example: some people who choose this diet eat like 20 mangoes for breakfast. This is more of an experiment than anything else, because I've never done 80/10/10 for long, so I don't know if this will work for me long-term or not. I will keep you guys informed the entire way. And you can stop sweating - just 'cause I'm goin' low-fat now doesn't mean I'm ever gonna stop posting food porn recipes and photos on my blog... *wink*. Speaking of yummy recipes... sushi, anyone? This roll is themed green because it's got avocado, zucchini and cucumber as the fillings. It tastes aaaaamaazzzinng so you should make it immediately. Now. Do it.... why are you still here.


THE GREEN ROLL

3 nori sheets
2 cups cooked rice (or use sprouts instead of rice to make it raw)
1 tablespoon peeled ginger root
1/2 cucumber
1/2 avocado
1 zucchini 

Slice the zucchini on a mandolin into thin noodles. Slice the avocado, ginger, and cucumber thinly. Evenly spread the rice onto the nori sheets and then layer on the plants; roll it up and have a party! Don't know how to roll sushi? layered ice cream cake with chocolate, vanilla & peppermint


First of all - please listen to this exquisite album by Edward Sharpe and the Magnetic Zeros, it's incredibly beautiful and makes me cry.

Secondly - this turned out fabulously, if I do say so myself (and I just did - so there.) I had a dream about this cake a few days ago and have been itching to make it ever since. When it comes down to it - this ice cream cake is mostly bananas. The pink layer comes from beet juice, and the green comes from avocado and peppermint leaves. I recommend using your Vitamix for this (can be bought on amazon or ebay) to make the layers as creamy as possible. 


I must admit - the avocado layer tasted sort of funky on it's own and I was thinking "Hmm... maybe my subconscious failed to consider the weird combination of avocado and mint in an ice cream cake." But it ended up tasting great with all the other delicious flavour pairings. The beet layer is unusually enjoyable. you might be thinking beets are a strange thing to make into ice cream, but the earthy tones of beets along with the sweetness of bananas is outta this world! Letting each thin layer freeze is a tad time-consuming, but it's worth it.

spiced chocolate, cashew vanilla, peppermint-avocado & banana-beet layered ice cream cake

Crust:
1 cup raw flour (I used buckwheat)
1 cup dates or prunes

Chocolate layer:
3 ripe bananas
1/3 cup cacao
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon cinnamon
1/4-1/2 teaspoon cayenne, to taste
2 tablespoon agave/maple syrup
water, if too thick

Vanilla layer:
1 1/2 cups cashews
3 tablespoons agave/maple syrup
seeds from one vanilla bean
1/3 cup water
juice of one lemon 

Beet layer:
1/2 cup fresh beet juice
2 ripe bananas
1/2 cup pine nuts
1-2 tablespoons agave/maple syrup
2 tablespoons melted coconut oil

Mint layer:
2 cup fresh mint leaves
1 avocado
1/4 cup agave/maple syrup
1/2 teaspoon salt
juice of one lemon
1/4 cup nut milk
2 ripe bananas

Coconut Maple Drizzle:
1 tablespoon melted coconut oil
1 tablespoon maple syrup

To make the crust: process the dates or prunes and flour until it all sticks together somewhat. Press into the bottom of a lined spring form pan and set aside. 

To make each layer: blend the ingredients (in each list) until smooth, then pour each one in a separate bowl. Pour on part of the chocolate mixture quite thin, then let it harden in the freezer. Next, pour on a thin layer of beet mixture, let it freeze. You get the idea. Pour, freeze, pour, freeze. Put them in whatever order you want until you use all the mixtures up! 

To make to drizzle, stir ingredients together until combined then decorate, I also added some lemon zest - why not. Enjoy!

avocado bliss

This is a super simple, nutritious, quick snack I make whenever we have ripe avocados (is there anything BETTER than a ripe avocado?). 
I used to only add avocados to other things, like nori rolls or in salads; but now I love eating them just as they are. They are a wonderful food. One of my favourites for sure. There is nothing like the creaminess, flavour and colour of an avocado.  

Also, don't be afraid of their fat content! Their fats are SOOOOO good for you. They keep your cells (our cell membranes are made of mostly fats, which are responsible for protecting our cells and moving around cellular materials) moving smoothly and fast, which ultimately allows your metabolism to burn calories more efficiently. Plus our hair, nails and skin are made of fats, so we should keep replenishing those with fresh new ones from whole plant foods like coconut, avocado, durian, olives, sprouted raw nut and seeds, and even bananas. These are the foods to eat for BEAUTY!

There's plenty of books about this subject. I Googled it really quick for ya and this link looked reliable. I encourage you to research this topic for yourself though. You're the best judge =)


Avocado Snack: Serves 1

1 Avocado
1 t Tamari
Walnut Parma or Nutritional Yeast

Cut the avocado in half, and take out the pit. (Try sprouting it so you can have your own avocado tree!) Score both halves, and put on Tamari then Parma/Nutritional Yeast. Eat with a spoon!
Another way to do this - don't add anything! Or add some spicy sauce, or agave/honey... "whatevs"!
