GIMME SUSHI: THE GREEN ROLL

Okay first of all don't freak out 'cause I'm eatin' white rice. I have been consuming so much brown rice lately that tonight I just wanted to do it up white. I hope we can still be friends.

Some of you may have tuned into the fact that I have hopped on the YouTube train! That's right, peeps - I'm making videos now. (Psst you should subscribe and stuff.) The past seven days I have been uploading "What I Ate Today" videos to give you guys a better idea of my general diet. Keep in mind I go through phases of liking certain meals/foods. The past week, I have been loving rice and tomato bowls, and sushi rolls. The smoothies I have all day are basically a ritual though, they don't change much because I will never get tired of my giant smoothies... *kisses Mason jar devotedly*

Upon watching my daily food videos, you may also pick up on the fact that I am eating an 80/10/10-ish diet these days. I say "-ish" because I don't stress over sticking to labels, I just eat what I want. Recently, what I want to eat has gradually turned into a high-carb diet. It was pretty much that before (fruit all day then grains and veggies for dinner) except that I never limited my fat intake. So now I am merely cutting down on my nuts and coco oil. As I have said before - I am not trying to scare anyone about consuming fat. Fat in your diet is awesome and uber necessary; PLEASE KEEP EATING IT. However, eat it in moderation. A single serving of most of my desserts will give you your daily recommended intake of healthy, wholesome fats so no worries there, bro. I got you. And honestly even if you eat like three servings it's still all raw goodness and you'll probably keep glowing and feeling great. Some of the healthiest people in the world consume all the fat they want, so it's not like the 80/10/10 diet is ideal for everyone. I always say just DO WHAT WORKS FOR YOU. And right now, for me, it feels most natural for me to carb it up and lower the fat content. I haven't been wanting to make the recipes I usually post on my blog. I've just been wanting ALL the fruit (smoothies with 10 bananas and crazy s*** like that) and massive bowls of rice and steamed veggies. There isn't a point in the day where I'm like "ugh I want a caramel chocolate bar with all my soul at this moment" (as ludicrous as that sounds)... so I haven't been making those kinds of recipes. Again... I am NOT SAYING they are unhealthy. They're flipping fantastic. But this is a personal diet shift for me. I was consuming a lot of fat because I would test all my recipes as I was making them, and then proceed to eat most of them all by myself. Hehe. My life is fab.

Here's the idea: when you are eating high-carb, you get so full on carbs - which are the body's ideal fuel source - because you eat as much of them as you want so you don't even have room to crave fats. For example: some people who choose this diet eat like 20 mangoes for breakfast. This is more of an experiment than anything else, because I've never done 80/10/10 for long, so I don't know if this will work for me long-term or not. I will keep you guys informed the entire way. And you can stop sweating - just 'cause I'm goin' low-fat now doesn't mean I'm ever gonna stop posting food porn recipes and photos on my blog... *wink*. Speaking of yummy recipes... sushi, anyone? This roll is themed green because it's got avocado, zucchini and cucumber as the fillings. It tastes aaaaamaazzzinng so you should make it immediately. Now. Do it.... why are you still here.

THE GREEN ROLL

3 nori sheets
2 cups cooked rice (or use sprouts instead of rice to make it raw)
1 tablespoon peeled ginger root
1/2 cucumber
1/2 avocado
1 zucchini

Slice the zucchini on a mandolin into thin noodles. Slice the avocado, ginger, and cucumber thinly. Evenly spread the rice onto the nori sheets and then layer on the plants; roll it up and have a party! Don't know how to roll sushi? Click here. By the way: this serves one person. Also: I ate it with this sauce.

sushi with sprouts & tahini miso ginger sauce

Oh my goodness gracious garbanzo beans. Make this NOW. You can taste the energy in this recipe, especially because of the sprouts. The sauce brings everything together deliciously with a savoury, sweet and salty flavour; the avocado adds a rich creaminess, the bell pepper gives you that juicy crunch and finally; the cucumber makes it all taste hella fresh.

I made this as soon as I got up, to take pictures while the light was good, because I wasn't going to have another opportunity all day (it was a VERY busy day). I didn't want to eat it for breakfast so I have been craving it all day, until the moment I stepped back in the door a couple hours ago and was able to eat it. It's fun and easy to make, no special equipment necessary, and not much mess either.

Let's roll, baby.

raw sushi with bean sprouts & tahini miso ginger sauce: makes 2 rolls or more

Sushi rolls:
1/2 avocado
1/3 cucumber
1/3 bell pepper
2 cups mung bean sprouts (or other fresh sprouts)
Seaweed sheets, like nori

Tahini sauce:
2 tablespoons tahini
1 tablespoon miso
2 tablespoons peeled ginger root
1 tablespoon tamari
1 tablespoon agave nectar
1/8 cup water (more or less)

To make the sauce: blend all ingredients until smooth and creamy, adding liquid as needed.

To make the sushi: slice the cucumber, avocado and bell pepper very thin, and add anything else you want to. Now spread some sprouts evenly over a sheet of seaweed, but leave a bit of space at one end and drip a tiny bit of sauce all over the sheet. Place in your veggies and roll up like a pro! Keep doing this until you use all your stuff. Then with a sharp knife, slice carefully present your beautiful sushi to the lucky folks you're sharing this with. If that's just you - pretend to surprise yourself and get really excited.

Vegan sushi just magically appeared from nowhere.

terryaki tofu roll with avocado, potato, cucumber & black rice

holy moly WOAH. make these! everybody (friends and mom) was really impressed with the combination of flavours and textures. i'm making this recipe again ASAP for my boyfriend. who can refuse cruelty-free sushi!? it's just that much better than raw-decomposing-fish sushi. better for you, the planet, and our fellow earthly creatures. YEAH!

if you want this recipe to be 100% raw, don't worry about the terryaki tofu and potato, you can use your fave raw vegan cheese or nut pate if you want. also, use sprouts instead of rice. buuuuuuut... i suggest making the tofu and potato with rice. so worth it.

the black rice really raised the meal to another level of sophistication (and good health, of course). it's an intriguing sight and fun to cook because the water turns dark purple. spooky. you could instead use brown rice or quinoa or whatever whole grain you have.

as usual - try to get organic ingredients, and better yet, get the veggies from your garden!

terryaki tofu rolls with avocado, potato, cucumber & black rice: serves 3-4

1 package tofu
2 potatoes
3 garlic cloves, chopped
3 tablespoons tamari
2 tablespoons maple syrup
2 tablespoons olive oil
2 teaspoons liquid smoke (i used mesquite)
1/2 cucumber
1 avocado
1 cup black rice recommended
nori sheets

cook the rice as directed. cut the tofu, potato, cucumber and avocado into long strips. sautee the tofu, potato and garlic in the tamari, liquid smoke and olive oil. spread the rice onto the nori sheets and lay down all the ingredients (including the tofu and stuff). roll in up and slice with a sharp knife into rolls. serve with tamari for dipping.

rainbow sushi

Have conventional ideas about Japanese-North American Cuisine? Throw 'em out. There's no reason you have to eat imitation crab and cooked white rice - or worse, deep-fried tempura - to enjoy sushi. For me, sushi can basically have the contents of a fresh salad in a different form, and be even MORE delicious. You can get all the flavours and textures of the real thing - while eating your greens, grains veggies.

I make this ALL the time since it's so easy and as long as you have a ripe avocado, the rest of the ingredients should be hanging around your kitchen anyways. You can even make it without an avocado, but personally I think it makes the dish; nothing like those creamy omega 3's (NOT from poor little fishies). I can literally feel my hair and skin start to glow!

I had pictures of one time when I made sushi and it was just gorgeous, very gorumet-cuisine-looking; but it seems I've lost them. Oh well, I'll make it again soon I assure you!

These tasted just as good. And I think they're beautiful in their own way. I didn't have any nori sheets (a type of seaweed, very nutritious) so I used some organic rainbow chard from the farmer's market (3 huge bunches for $5! Who says bein' raw is expensive?)

Rainbow chard has got to be one of my favourite greens. The beautiful, vibrant colours of the stems that run through the leaves like living veins; it's one of those foods I don't want disrupt by eating! But I do =) That and dino kale. It's a split.

Rainbow Sushi: serves 3

3 big leaves of greens, or nori sheets
1/2 cup of your fave raw thick sauce or spread (I'll provide recipes for all my sauces eventually...)
A big handful of sprouts (you can even use sprouted/cooked whole grains like buckwheat or quinoa)
Bell pepper
Celery stick
1/2 avocado
1/2 tomato (optional)

Cut all the veggies and avocado into sticks. Spread thick sauce onto inside of each big leaf. Put on the sprouts next (all over the leaf), followed by the veg sticks and avocado, on one side. Put a bit more sauce on the opposite side and roll up. The sauce keeps the rolled over leaf stuck to it so it doesn't fall apart. (You're basically making a burrito here, people.) Then cut the roll into sushi-sized pieces, plate, and sprinkle on walnut-parma. Yum!
